Gameday Menu 3
For the third preseason game I decided to go for subs. The sandwich of choice was an italian flavored chicken sub. To go along with the sandwich’s I opted for salads, one a traditional Caesar with the other being a fruit salad. It was a pretty nice spread that took hardly any time to assemble. The fruit salad was simply purchased from the grocery store since they have been stocking really nice fruit salads as of late. My girlfriend was in charge of the Caesar salad and I made the chicken subs. Here is how I went about making them.
- 2 pounds of boneless skinless chicken breast cut into strips
- 2 envelopes of powered Parmesan Italian dressing mix
- 2 cups of sliced fresh mushrooms
- 1 cup sliced red onion
- 1/2 cup extra virgin olive oil
- submarine buns
- provolone cheese
Place chicken strips in a bowl; sprinkle with salad dressing mix.
Saute mushrooms and onion in the olive oil for a few minutes
add the chicken saute until the juices run clear
scoop the mixture onto the submarine roll bottoms
top with the provolone cheese
stick in the broiler for a couple of minutes so the cheese can melt
replace tops
eat
